In 2017, Bruce Laird and Penny Palen, owners of Trollers Fish & Chips partnered with Renay Deschambault to operate Penny’s Palapa. Their mission was to create a holiday atmosphere on the water. A place where locals and tourists alike come to escape and to enjoy fresh lime margaritas and authentic Mexican food with a west coast flair.

Bruce
Co-OwnerBehind the scenes and on the dock, Bruce is working towards improving your experience. As a trained carpenter Bruce is behind most of our renovations. Bruce is always ready to think outside the box. He keeps business ideas flowing, and is never afraid to try something new. Bruce made redesigning Penny’s kitchen, adding a take-out window, and enclosing the patio top priorities for 2017. -
Renay
From the start to finish of everyday, Renay is working to make your experience at Penny’s Palapa a memorable one. With a strong background in customer service and Restaurant Management. Renay is the leader that knows that teamwork makes the Dream Work. From Fiesta Fridays to Taco Tuesday, she’s creating the vibes that transports you to a vacation destination. Renay championed the restaurant’s upgrade to the TouchBistro system in 2017.
